So I have been trying new foods lately, trying out new recipes and one of my latest new found love for breakfast choice is overnight oats (recipe coming soon, if you want it). I love the overnight oat because I don’t have to do any cooking, yes I can be that lazy and not want to cook. I also fell in love with my egg in toast cups
The Last 365 Days
I really don’t know where to begin, but hey I’ll start from how it all began. Like play like play, my active kitchen is one year old. Phew! All thanks and adoration to the king almighty for the grace that has brought me this far. The journey has not been easy and smooth as I hoped but His grace has kept me through.
Mr Monday's Okra Stew
When I was pregnant with my daughter, all I could manage to eat at some point was Mr Monday’s okra soup. Ok, before you start wondering, Mr Monday is hubby’s work colleague and this okra soup was one of their go to soup when the boys were hungry then. The first time I had this meal I couldn't believe my mouth. Lol.
Plantain mosa (plantain puffies )
Please don’t say it, I know what you are about to say... plantain again? Well yeah why not, what is not to love about plantain? You must be thinking I've got a plantation of plantain behind my house for posting three consecutive plantain recipes.
Plantain Moi Moi
Are you still letting the bin enjoy the goodness of your over ripe plantain? Well, I have got good news for you. As long as your plantain is not rotten, you can make yourself this lovely plantain pudding also known as epiti or ukpo ogede. If you love eating moi moi (moin moin) then this is another lovely recipe for you to try out in your kitchen.
Garlic Butter and Chilli plantain
Ok, are you already thinking why would I eat plantain with garlic and butter? I tell you what, why not? This recipe was borne some weeks back when I made Jollof spaghetti and garlic butter shrimps for lunch, I also fried some plantain to balance the meal as a correct Nigerian girl that I am.
Egusi Ijebu
Eweso omo Alare, This is one of the easiest Yoruba local soup you can ever cook. Egusi Ijebu as the name implies is from Ijebu and it is very popular too. Le bae is from Ijebu but we hardly cook this soup but the days he feels nostalgic, I have got to get myself in the kitchen and make the soup. This time around I got a bit of help from him especially when my egusi soup started clumping.
Vegetarian Jollof Rice
I was cooking noodles for my lil one the other day and immediately she saw me bringing out the peas from the freezer, she went ‘no mummy I don’t want it in my noodles’! I thought she was joking and well, as a mother I told her she is so eating it. My lil one insisted and stuck to her guns ‘mummy please I don’t want it’.
Banana and Strawberry Smoothie
Today my lovelies, I’ll be sharing this simple and amazing classic smoothie recipe; the banana and strawberry smoothie. Growing up, I had a lot of banana smoothies and sometimes if I needed to jazz it up, I just added peanut butter. Back then I never saw it as being a healthy choice; I just saw it as another way to enjoy eating banana.
How to Make Nigerian Salad
If you’d guessed salad was going to be my next post then you are so right. I just couldn't afford to let the remaining vegetables used for the chicken shawarma go to waste - food recycling. I had to put it to good use. It is difficult to get Africans to eat salad but thanks to the ‘get fit’ obsession going around.
