Nigerian-Style meatballs with Rice

Hello my lovelies, it’s been some few days I posted on here and it feels like ages, anyway how are you and hope you all missed me? Lol.  Today’s recipe was dinner some few nights ago and I tell you it blew minds away (Well, If I do say so myself). I cooked an itallian dish in a very Nigerian way just the way my mama taught me.

Stewed Beans (Ewa)

I used to think I know how to cook stewed beans till I met my hubby, I am more inclined to cooking my sauce separately (Agoyin/buka style) as that is the way I like it.  But ever since I learnt how to cook his style of stewed beans, I have not looked back and with the help of a pressure cooking pot, it means I can cook my beans in about 45 minutes.

I’m still on about valentine and #bae. Valentine should not leave you out of pocket and should not be a thing of impressing others for the wrong reasons. We should learn to embrace change and do something new sometimes. If you go out on a date night at every val’s day, why not give it a miss this year and stay at home to cook something really quick and special for your love.

Yoyo Soup…

The first time I cooked this soup, I invited my dad to mine for lunch. I called him on the phone and I started going on about this new soup I learnt to cook from the TV. He was like your mum is not gonna like that. I told him, trust me she wouldn’t mind if she tastes the goodness of this soup.

Baked Tilapia and Sweet Potato Wedges…

This recipe is one of the quickest meals you can make after the day’s hard job. It requires less or no prepping time and it is healthy and super delish… the fish can be cooked straight away as you don’t need to marinate it, the sweet potato doesn’t need peeling, all you have to do is season well,  put in the oven  and wait to enjoy a stress free meal after a stressful day.

Ofada Stew…

This stew is different from ‘ayamase’ simply because of the choice of pepper. Green bell pepper is used for ayamase but if you want the proper local taste, then I think you should try it with the red bell pepper and some tomatoes. To be honest I didn’t discover ayamase until I was in my 20’s.

Spicy Couscous

The first time I heard about couscous was about 5 years ago during my national youth service. I spent a year in Kano, Dala to be precise and I can say categorically that couscous is one of the favourites of the northerners. How they cook it then I don’t know and I never had the chance to cook one as I thought it’s going to be a hassle cooking something so tiny and it just look complicated.

Fish and oven baked sweet potato

This recipe is all down to one of my colleagues at work. We share the same interest in food and photography. So this wonderful day, she started talking about sweet potato and how you can do so many things with it, not forgetting it is healthier than other potatoes.
