Nigerian Sausage Roll

One of the many snacks a Nigerian wouldn’t say no to, is sausage roll. It is a tasty snack and very easy to make too. I was at home last weekend and I had plans to make some sausage rolls for a friend but after I baked these little devils, I tasted one and I was hooked. I changed my mind instantly. I know it is bad and selfish of me but lord knows you would do the same.

Yam and plantain frittata

Frittata is an egg dish that can be eaten as a main meal or brunch. It is slightly different from an omelette as you have to finish a frittata off in an oven. Also all the ingredients used are folded in the egg and cooked. You can choose any filling you want and make it your own. For this dish I chose plantain and yam,

Easy banana and coconut loaf

My friend and her son visited us sometime before Easter and I, being my naughty self got her to bake with the kids before she left. She couldn’t say no and yes it was really fun, the kids loved every bit of it. My daughter and her son were just over the moon and bless her she was really patient with them.

Semolina Pancake with coconut milk and caramelised banana

Whilst growing up, I remember my mum making pancakes for us with corn flour. Truth be told, it is one of the best pancakes I have ever eaten. It has a taste I can’t really describe but it is divine.

Recently, I was looking for what to cook for breakfast and pancake came to mind. I thought of the closest thing to corn flour and I decided to use semolina powder. They are quite similar if you ask me.
