Eja yoyo, eja Eko, this is your go to snack on a very hot afternoon. Hello again and I’m sorry I have been MIA for a while. I need to get my acts together really fast and get back to blogging again. I miss blogging tho but I have just been caught up with so many things.

Back to my Eja yoyo recipe, my dad and I went shopping the other day and I saw this fish, sprat and the first thing that came to mind was Eja Eko also called eja yoyo. This type of fried fish is a popular street food in Lagos state, it is affordable, very easy to make and yummy too. I got this fish for less than £3 and it fed about 7 people conveniently. Eja yoyo is deep fried, coated in flour, seasoning and salt. If you want, you can add cayenne pepper to the flour mix to make it spicy. This method is the common and commercial way of  frying (street) fish in Nigerian.

What you will need

1kg sprat fish (any type of fish would work for this recipe, simply cut into bite size)

Flour

Corn flour (optional)

Onions (optional)

Salt

Seasoning

Cayenne pepper

Veg oil for frying

Method

Rinse and drain fish on kitchen towel (make sure you get rid of excess moisture)

Season fish with salt, seasoning and pepper if using.

Add flour, corn flour, seasoning and salt (if using) to a bowl and mix together

Place a shallow or frying pan on a high heat, add oil and leave till hot, carefully drop in the whole onion in the hot oil.(The onion flavours the oil)

Take the seasoned fish and add to the flour mixture in bits. Coat the fish with the flour mixture and shake off the excess

Carefully add the flour coated fish to the hot oil and fry until golden brown and crispy (fry to your taste) Drain on a kitchen towel

Repeat the process till you have exhausted the fish.
