Piri Piri Chicken

If you love hot and spicy food then this piri piri chicken is for you. It is delicious and  moist and you can adjust the hotness of the chicken by adding more or less chillies to sauce.  Piri piri chicken also called peri peri chicken is easy to make and it doesnโ€™t require much effort. In fact, the chicken marinade and the oven, does most of the job for you.

The chicken requires marinating, the longer the better. Marinade for at least an hour in a cool place or in a refrigerator overnight

What you will need

4 chicken quarters (substitute with other chicken parts)

4-5 birds eye chilli (any type of chilli should do and you can use more according to your tolerance)

Salt to taste

Seasoning (optional)

1 lemon (juiced)

1 bay leaf

4 cloves garlic

1-2 tbsp chilli flakes

1 tbsp Oregano

100-150ml rapeseed oil (substitute with olive or vegetable oil)

Method

Wash and pat chicken dry. Score chicken a couple of time and set aside

Put all ingredient except the chicken in a blender and puree

Divide sauce into 2 and pour half over chicken, rub in till well combined and all area covered. Leave to marinade for an hour or overnight. Keep the rest of the sauce in the fridge or leave in a cool place

To make piri piri chicken

Bring out chicken from the fridge and remove excess marinade

Preheat the oven at 180โฐ

Place a frying or a griddle pan on a medium heat, add tiny bit of oil, place chicken in pan and seal each side for 2-3 minutes

Transfer chicken to a baking tray and bake for 30-45 minutes or according to the cooking instruction on chicken package. Baste chicken every 10 minutes with remaining marinade.

After chicken is fully cooked, leave to rest for some minutes and serve with remaining piri piri sauce and side of choice.
